Sea Prawns are the most abundant prawn in markets, locals call it: Ang Kar Hei (海虾 / 红脚虾). You would notice their quite distinct reddish coloured legs. You can find them easily at the wet markets. Typically used for prawn based soups at our local hawker centres. The shell is thin and the tail is very meaty, its meat is very bouncy and sweet, great choice for modern fusion dishes too!
